Mr. LeCroy’s Fresh Apple Cake

When we opened 12 years ago, Mr. LeCroy, a long time resident and local restaurateur, came out of retirement to do cooking demonstrations of his amazing apple cake. It's still a Copper Q fan favorite!
Ingredients:
12 cups fresh apples, pared and diced
6 cups granulated sugar
12 oz butter
3 cups chopped nuts
8 eggs
3 tsp salt
6 tsp vanilla
7 cups flour
2 tsp baking soda
6 tsp cinnamon
Frosting:
8 oz. cream cheese
4 oz butter
1 tsp vanilla
1 pound powdered sugar
Technique:
Preheat oven to 400 degrees.
In a large bowl mix, apples, butter, vanilla, sugar and eggs. In a separate bowl, mix flour, salt, baking soda, nuts and cinnamon. Combine mixture into one large bowl - you may have to mix with your hands because the texture is sticky. Place mixture in three 9X13 pans. Bake at 400 degrees for 45 minutes.
